(2 lb bread machine recipe)
english muffins
1 c milk
2 eggs
1 tsp salt
2 tbsp sugar
2 tbsp shortening
3 c flour (can sub 1 c of whole wheat for 1 cup of white if desired)
1 1/4 tsp bread machine yeast
add ingredients in order listed. Set to dough cycle.
when done remove and let rest 10 minutes under a bowl. roll 1/4 inch think and cut in 3 inch circles. brush top with water and sprinkle with cornmeal. let rise until doubled in size (about 40 min) Fry on an electric skillet at 400*F. grill 5-7 minutes on each side until golden brown, if not cooked through finish in a 350*F oven for 5-10 minutes.
