Breakfast Potatoes by Elisabeth
1 bag of simply shredded potatoes. (they are in a green bag) any non frozen shredded potato will work
1/4 cup red pepper
1/4 cup yellow pepper
1/4 cup green pepper
1/2 cup onion
2 eggs
cheddar cheese
oil pan
saute onion until it starts to brown. add peppers. saute for about 5 minutes.
add bag of shredded potatoes and saute until they just start to brown. you may have to add more oil
remove from heat.
spray muffin pans with oil.
fill it muffin section with potato mixture.
beat 2 eggs in bowl
once all the tins are filled with potato mixture add shredded cheddar cheese on top. as much as you want.
pour egg mixture in each cup. this is what will kepp the potatoes together.
bake at 350 for about 30 minutes or until egg sets and potatoes brown. this makes about 16 muffin cups.
you can basically anything to the potatoes. sausage, bacon, scallion, feta cheese, etc.
